How do you get your cookies so even?

I repeatedly get two questions ALL of the time:

a.) How do you get your icing so even

b.) how do you get your cookies so even

I will answer "a" later because it's not a "quick and dirty answer.

Below is a picture of my first cookies from February 2010. If you looked at them closely you'd notice they're uneven.

This year is my five year anniversary of making cookies and I have learned A LOT! Today, I want to tell you how I get my cookies so even. Once you see it, you'll want to run to the store and purchase it for yourselves! Look closely at the rolling pin in the picture below. It's a picture from December of 2011 when I started to really take cookie making seriously. I did a lot of research (read this as: asked my sister-in-law a lot of questions about everything she knew, and googled a tiny bit of stuff). It was the first year I wasn't truly "working" full-time but we were poorer than poor. I think if I made a single cookie making purchase that year it was these rollings pin rings. They slipped on and off my rolling pin and allowed me to make even cookies. But Ethan was growing in my belly and I could no longer use it for leverage so Josh had to help me squeeze them on every time. I got my money's worth and they served their purspose but the task got real old, real fast!

Fast forward a year later when we were settled into our home in Fort Wayne and I located Country Kitchen Sweet Art just miles from my house (this was a sad moment for Josh and the bank account but it took my cookie making to a whole new level). One day while browsing the store I found an all-in-one version of the rolling pin rings. Mine isn't as colorful since it's an older version, but it's just as fancy and does the same work! If I were going to a deserted island to make cookies, this would be something I would bring along!
